I've flown under bridges but under boats? LOL!!!
The thing about this level of style with ease, you can't force it. It just happens.

if you hit the boat at the right angle with the jet, you can scoop it out of the water and catapult it

Sounds like some Demilance hacks to me.
You can also slow a jet down enough and have one wing 'clip' a strong tree and it will do an immediate 90 degree turn and you're on your way. Also, when attacking gunship in a jet, you can apply the same move and you can ram it and keep going. I learned this by being a terrible pilot.

i forget who it was but someone posted a vid of the jet flying around with a boat on top of it. pretty funny
Unfortunately, that caused massive stuttering for both vehicles, so you couldn't be a generic brand gunship :/
I forgot to add, this does kill the gunship in one fell swoop.
